The small buzzes in lockdown life. Suddenly, they’re bleedin’ massive 🤣

Like poached pears in the morning with granola. Cold brew coffee. And yoga. The simplest of things can effortlessly satisfy the most complex of emotions. They salve our nerves and help create space in our ever-squeezed lives. 

You can find this bonkers-delicious recipe for red wine poached pears on my IG grid a few weeks back (using organic wine for under a tenner in Lidl). Today I resurrected a rooibos & pistachio  poached pear recipe I did for the Sunday Independent years back, which aims to comfort yet simultaneously uplift. Hope it helps you to rest and reset ✨

5 rooibos teabags
6 pears, peeled 
180g coconut sugar
Juice of 2 lemons
2 strips of lemon rind
Greek yoghurt or @coyo_uk, to serve
Pistachios, to serve

Pour 1 litre of boiling water over your rooibos teabags and allow to brew for 25 mins. Discard the teabags, and transfer your brew into a saucepan large enough to accommodate 6 pears without stacking. Add your favourite sugar. Heat and stir until the sugar granules dissolve.

Now add the pears and lemon. Cook gently under a lid until tender. You can check by sticking the sharp point of a knife into a pear, and feel whether it's ready or not. I find 20 minutes does the trick, but this will largely depend what variety of pear I bought and how ripe the
fruit is. You don't want mushy pears, so it's worth checking frequently.

Once the pears are tender, scoop them out with a slotted spoon and cool to the side while you boil the liquid into a thick, licksticky syrup. The syrup is done as soon as you notice the volume of liquid has reduced considerably. It will further thicken upon cooling.

Serve straight away, drizzled with rooibos syrup, crushed pistachios and clouds of yoghurt. Or refrigerate for up to 5 days and wait until the mood yodels.

This buckwheat banana bread gives my 2 lads a break from wheat and lets their body samba with a different grain. You can use brown rice flour too, if you have no buckwheat flour. It’s also vegan 🌱, gluten free, egg free, lactose free and stress free. Oh, and parental free (kids, make it yourself!) Hallelujah...

4 tablespoons of your favourite milk
1 tablespoon psyllium husks
1 teaspoon good-quality vanilla extract
170g your favourite sugar (e.g. light muscovado, coconut sugar or golden caster)
100g extra virgin coconut oil (v), Naturli (v) or butter at room temperature 
Roughly 320g mashed over-ripe bananas
200g buckwheat flour
1 teaspoon baking powder
Generous flurry of flaky sea salt
40g dark chocolate chips (optional)
Handful of whole buckwheat groats, to top

✨Preheat the oven to 180°C. Line a medium-sized loaf tin about 16cm long or 1lb tin with non-stick baking paper such as If You Care brand (which is awesome). 

✨Make your plant ‘egg’ by mixing the milk, psyllium and vanilla in a cup. Leave to stand and swell for 3 minutes.

✨In a separate bowl, beat the sugar and fat together by hand with a fork until glossy. Stir through the mashed banana and psyllium ‘egg’. Now tumble in the flour, baking powder and sea salt. If you’re using chocolate chips, add these in too. Mix well.

✨Scrape into your lined loaf tin . Scatter with whole buckwheat groats for an excellent crunchy topping. Bake for 60-70 minutes, depending on your tin. When it’s finished cooking, a skewer stuck into the centre will come out 98% dry.

✨Remove from the oven and let the bread settle for 5 minutes before ejecting from the tin and letting it cool on a wire rack. This bread keeps really well all week in a bread basket, covered with parchment.

The healthy wholefoods movement is often described The healthy wholefoods movement is often described as the 1970’s, resuscitated on kale powder and kimchi. Please! Wholefoods is punk, darling. Not hippie. 

Great swathes of perfectly sane people have turned their attention towards mindful practises, in search of a more socially responsible roast from capitalism. You'll find we don't just do sausies. We do slow pork, where piggies have been massaged with lavender, read bedtime stories and fed bottles of rooibos tea. We don't do slicepan. We do house-cultured sourdough, from heritage grains harvested by moonlight. And we do not do instant coffee. We dry hump our monthly subscription box from @brewboxcoffee_  where the coffee beans were raised on Bach, and lightly washed with tears of joy.

We are taking unrefined whole foods and celebrating them in their most basic form, in contrast to society's reliance on conveyor belts and chemicals. This is counter culture. This is punk. (Funk? Food punk? Anyways ...)

In the 1970’s, cooking skills sucked – we were too busy lovebombing the world with geraniums. (Point of information, the 70’s actually happened in the 80’s here in Ireland). Forty years on, our culinary skills have been heightened and honed. Getting fresh vegetables into children can sometim Getting fresh vegetables into children can sometimes feel about as turbulent as an AGM for thirsty vampires 👀. 

This red pepper sauce should help. As will growing your own veggies or herbs and giving them the responsibility of looking after their very own plot or pot 🪴 (Marty, pictured 3 years ago loosing his s/!t pulling a fresh turnip out of the ground and demanding it for dinner). 

Peppers are particularly rich in carotenoids. Research tells us that carotenoids are useful for strengthening our immune system and psyching up our front-line defences. They're not called “peppers” for
nothing!

🌱Red Pepper Pasta Sauce 🌱
(6-8 portions)

3 red peppers, de-seeded
1 tablespoon extra virgin olive oil
2 cloves garlic, in their papery shells
1 tin cooked lima beans, drained
Your favourite pasta (we ❤️ buckwheat)

1 Fire up your oven to 200 Celsius.

2 Cut your peppers into uniform size so that they roast evenly. Tumble onto your biggest baking tray with the garlic pods and coat with olive oil. Bake for 30 minutes, shaking the tray half way through cooking.

3 In a blender, whizz the drained beans with the roasted peppers and any juices released during baking. Carefully squeeze out the gooey garlic from their shells and purée until smooth.

4 Store in a jar in the fridge until needed. You can freeze in portions too. Yahtzee!

🍊Makes 12 🍊

2 organic blood oranges

300 caster sugar (you won't actually be using all this sugar with the end result)

1 teaspoon ground cardamom

200g dark chocolate, melted

 

✨Wash both oranges. Thinly slice each, discarding the butts.

✨In a large shallow pan, bring 300ml of water to a happy gurgle. Stir in the sugar and cardamom until dissolved.

✨ Immerse your slices into the syrup and simmer for 30 minutes, turning halfway through cooking. I like to swirl the syrup over the oranges several times throughout cooking. Take them out sooner, if the slices are very thin.

✨ Gently lift them out once cooked and leave to drain on a wire rack for 20 mins. (Pop some parchment underneath, to catch the dripping mess).

✨Transfer to an 100C oven, and leave to air dry for 2 hours. You'll need to check on them by taking the odd nibble and seeing if they're ready to coat in chocolate. Don't panic about overcooking - it's at such a low temperature!

✨Remove once done. If they are too wet, the chocolate will struggle to stick. A little bit tacky is perfect. Fully submerge each candied slice into melted dark chocolate (or dip half like I did here ☝🏼). Place on non-stick parchment and leave to dry in a cool room.
