This tray bake is immensely satisfying and rich, even in the absence of meat. I'm using jackfruit to fool the carnivores in my family. Plant power! 💥 🌱

I find myself wondering whether future generations will look back and yack at the idea of supermarkets selling solid lumps of animal flesh. If you arrived on Earth today and saw how we dismembered other living creatures, then sold them in plastic trays, you’d think that we were greasy psychopaths 😳

But for now, the mass manufacturing of meat limbs seems perfectly acceptable. Strange, eh?

If society’s relationship with factory meat seems disturbing, could we start buying less of it? Or could we shift focus on badass plant foods like this *pulled pork* jackfruit?. We’d also be doing our wallet, our health and our planet a whopping great service. 🌍 Look, I’m pretty caffeinated right now, and this roasted cauli & jackfruit is making me disproportionately happy. Try it! @jackeduphere is a small Irish business specialising in jackfruit (check your local Supervalu Food Academy section #supportingsmallbusinesses #gifted)

Fire up your oven to 220C and roast 1 large head of cauliflower (chopped) in coconut oil. Halfway through cooking (circa 10 mins), toss the florets so they colour evenly, then sprinkle with ground turmeric, a packet of jackfruit like @jackeduphere , 2 sliced bananas, and roast for a further 10 minutes until charred and sticky. Serve with chilli, yoghurt and mint. Phwarrrr.
