Well hullo hullo!

Pitch dark brownies anyone, with a health-enhancing side of SCFAs? (Was that a hellyeah?)

It’s zero waste month dear readers and eaters, which means we’re starting with the best ever brownies you are likely to taste. Think of them as pacemakers for your toes and your tonsils.

The demo (above) will help you upgrade your sugar cravings into a nutritional slamdunk, while fighting food waste.

Aqua faba is the liquid from a can of chickpeas or white beans, regularly used in vegan baking to replace eggs. Sounds rather punishing, but it's actually pure genius!

It has enough protein to mimic egg whites in baked goods as well as whipping into meringues (my next saucy post, stay tuned!) Aqua faba is also handy when you run out of eggs and still want to kick those chocolate cravings in the crotch. 

I've become quite the aqua faba witch lately. With some magic and giddy incantations, I'm making all my cakes vegan. But that's not all … I get to salve my inner eco worrier knowing that I'm honouring leftovers and tackling food waste.
