My Summer Salad on Repeat
Spicy Aubergine Black Lentils
Hello you adorable being! Thank you for such positive feedback to my Substack space so far. And a big howdy to my most recent subscribers! Let me know in the comment section if there’s a topic you’d like covered.
You guys love your lentils. This week, I'm sharing another fibre-fuelled breakdance. As you already know, lentils are a wily mixture of both protein and carbohydrates, making them particularly satisfying in the absence of meat. We did a whole month of lentil-loving last April (click here for more on legumes).
Belugas are pitch-dark, teensy lentils that hold their girth once cooked (unlike their cousins, which are more suited to dahl and soups). They are christened Beluga because they look like caviar. But let’s not get carried away – beluga lentils are about as close to caviar as Trudeau is to Trump.
Quite apart from tasting satisfyingly creamy, these particular lentils are fibre heavyweights. Fibre is your bitch. She’s always looking out for you, making sure you’re regular and tickety poo. Without fibre, your personality would expire. Yep. There's nothing sexy about chronic constipation. A fibre-rich diet also helps us to kiss haemorrhoids bye bye (although that would be a feat in itself, actually. I should probably drop the visuals). About 75% of us will experience haemorrhoids (piles) at some point in our lives, most commonly occurring from age 40 and over.
