Pop! Champagne rhubarb, otherwise known as forced

Pop! Champagne rhubarb, otherwise known as forced rhubarb. I found a bunch at @forestavedub . So sprightly and delightly, like 🤪

Trick is to poach the rhubarb in a sugar syrup, but take it off the heat source straight away so it doesn’t collapse into a stringy mess (see my Instagram stories if you fancy 👆🏻)

500g chopped forced rhubarb
400ml water
400g golden caster sugar

Bring the water and sugar to a rolling boil. Drop the rhubarb in, take off heat source, and place the saucepan on your kitchen counter. Cover. Breakdance.

Depending how thin your rhubarb stalks are, they may be poached as quickly as 1 minute of sitting in the hot syrup. Or it could take 3 minutes.

Spoon out of the syrup and serve with kickass yoghurt and floral Irish honey like @openhivehoney 🐝 (where you can sponsor hives for all ye honey lovers)

🌱 Keep the poaching syrup for your kombucha 2nd ferment. It’s awesome!
